Joel Johnson of Boing Boing likes X-Chat Aqua on OS X but also mentions Colloquy favorably. The recent BoingBoing IRC thread offers other programs, including one that also handles IM and one that's a plugin for Firefox (chatzilla).

X-Chat Aqua 0.16.0 last updated on October 23, 2006.

Colloquy 2.1 last updated October 15, 2007, with a note that's the last release for OS X 10.3.9 and future releases will require leopard or tiger.

I haven't used either before but just downloaded them to see, and found Colloquy prettier but less helpful to an IRC newbie like myself.
